Glazed Bacon & Brussel Sprouts

There’s a groovy little tiki bar right off of the New Smyrna Beach Marina called Outriggers Tiki Bar and Grille. They have an amazing, eclectic menu. Good beachy vibes, beautiful scenery, incredible service and delicious food. They can serve a mean appetizer of Glazed Bacon & Brussel Sprouts. Like totally ridiculous amazing. Their food is completely out of control and it’s these kinds of family restaurants that inspire me to re-create meals that transport me to wonderful memories that I’ve made.

 

Growing up, everyone hated brussel sprouts. Why is that? I guess because people don’t know how to cook them well so they come out really gooey on the inside and basically taste bland. Kids don’t like eating bland vegetables. Most kids don’t even like vegetables at all. A lot of it comes from the parents and the very commercialized products constantly shown on TV. Sorry, I’m not sorry. Brussel sprouts are not something they look forward to seeing on their plate. Surprisingly enough, these Glazed Bacon & Brussel Sprouts are kid friendly and mother approved. Just like the Kix commercial says. You see?

 

Tell me how we still have not bought the couch that I’ve been dreaming about for months. For the longest time, ever since we moved, I have had a table in the living room full of artwork in frames ready to go up on the wall once we bought the new couch we’ve been eyeing. Our old couch had a tiny piece of wood on the inside that broke a while back. When we would sit on it, it felt like one of the comfiest couches in the world; but, once you got up, your back would be thrown out. Obviously, worst couch in the world. I am the one who broke it so I’m told I am to blame.

 

Speaking of artwork, there was a frame that had fallen off the wall in the living room when we lived at the Lake Debra house. I was home alone and thought nothing of it to just stand up on the couch and put the frame back on the wall. Bad idea! I lost my balance and as I fell back onto the coffee table, I heard the piece of wood crack. My LACK coffee table survived and my Ashley Furniture couch died. My big toenail on my left foot ripped off the skin about halfway and I basically thought I was dying. I don’t think I would do very good at war. At the moment I was obviously not as concerned about the couch as I was about my own foot. I found out later when I sat on the couch to relax and fall myself almost unable to get up. Completely unrelated to the broken toe, of course.

 

Sometime this week, we decided it was time to put up our gallery wall in the living room with the measurements of the new couch marked on the floor with blue painter’s tape. YAY! It was a complete success! It took about an entire day to get it just right. We are beyond alleviated that we do not have a table full of frames anymore. Maybe it’s time for a new couch soon? Yep, I think so. A good old trip to IKEA is very well in order.

Glazed Bacon & Brussel Sprouts
Serves 4
These Glazed Bacon & Brussel Sprouts are kid friendly and mother approved made with perfectly glazed bacon, baked brussel sprouts and a balsamic reduction.

Ingredients
  1. 1 lb brussel sprouts, halved
  2. 1 red onion, diced
  3. 2 tbsp olive oil
  4. Sea salt, to taste
  5. Spray coconut oil
  6. 1 pkg turkey bacon, chopped
  7. 3 tbsp balsamic vinegar
  8. 1 tbsp raw honey
Instructions
  1. Preheat oven to 425° F.
  2. Cut brussel sprouts in half. Dice onions.
  3. In a small bowl, mix together brussel sprouts, onions, oil and salt. Spray baking sheet with coconut oil. Line your veggies evenly onto the baking sheet.
  4. Bake for 30 minutes.
  5. Chop bacon into little chunks. Cook on a pan till lightly browned. Remove from heat.
  6. In a small pot, add balsamic vinegar and honey. Whisk on medium heat until bubbly. As it thickens, lower the heat and whisk softly. Add bacon to your balsamic reduction. Set aside.
  7. Remove veggies from the oven. Allow to cool for 5 minutes.
  8. Combine veggies, bacon and balsamic glaze in a bowl. Toss until evenly coated.
  9. Serve.
