Honey Mustard Broccoli Slaw

Florida weather can certainly be crazy! It might not snow—I wish—but from one day to the other it can be freezing, and; then, suddenly it’s boiling. In the last few weeks, it’s been so cold that we’ve been able to keep the AC off. We’ve even had the windows and sliding doors open. It’s been amazing weather!

 

Hot and sweaty. Boiling and humid. The traditional Florida weather is back on track. I guess you can truly say the beach days are here. We will be taking advantage of those days for sure. I hear that a trip to Cocoa Beach is most definitely in order. You better believe it’ll be the type of trip with a cooler, some Angry Orchard beers, a huge container of cold Honey Mustard Broccoli Slaw, grass-fed flank steak with Pink Salt & Rainbow Pepper Mix to grill and, of course, tanning oil.

 

There is nothing more refreshing than to wake up in the morning to a chilly house that’s been chilled all night with the fresh outdoors. Of course, lo and behold, we woke up one day suffocating because it was suddenly 80° F outside again. Bummer! The AC went right back on and here we are. A cold and rejuvenating salad is what I needed to beat the heat. Delicious and bittersweet Honey Mustard Broccoli Slaw was made with local, fresh ingredients straight to your dinner table. Or, lunch for us. On the beach, to be specific.

 

I might be missing the cold a whole lot, but, what I didn’t realize was that in the back of my mind, I was missing the heat so much more. My subconscious was dreaming of laying on my soft roll-up beach towel on the warm sand with the sand crinkling between my toes. I was secretly wishing for that salty breath of fresh air that comes when you’re standing feet first in the ocean. All that is about to become a reality in just a few short days and I’m ecstatic! My honey has been working a whole lot lately. Thank God she has this upcoming Saturday off. You better believe I’ve been plotting and planning already. I have my bathing suit and cover up with matching accessories all lined up in my closet ready to go. Our beach bag has been packed by the door for at least the last two days and every time we make eye contact all I can think of is BEACH!

Honey Mustard Broccoli Slaw

Delicious and bittersweet Honey Mustard Broccoli Slaw is made with local, fresh ingredients straight to your dinner table.
Ingredients
Honey Mustard Dressing
  • 3 tbsp raw honey
  • 4 tbsp mustard
  • ¼ cup Greek yogurt, plain
  • ¼ tsp Bill Bragg’s amino acids
Slaw
  • 1 (16 oz) bag of broccoli slaw*
  • 3 tbsp local bee pollen
  • 3 tbsp chia seeds
Instructions
  1. In a small bowl, whisk together all ingredients for dressing. Set aside.
  2. Toss slaw ingredients together in a large bowl until well mixed. Pour dressing over slaw. Toss until fully covered in your honey mustard dressing. Garnish with extra pollen and chia seeds, if desired.
  3. Serve.

* Contains sliced carrots, broccoli and red cabbage.
