Banana Nut Protein Bars

Whether we’re going on a long road trip or not, we look to stock up on different flavors of Larabar. These are not the most inexpensive protein bar on the market. We also like to stock up on Clifbar. And the same goes for those as well. One of my all-time favorite flavors has got to be banana nut, hands down. Hence, the fact that it’s my favorite fruit.

 

This recipe was exciting to develop because we used one of our all time favorite snacks, Trader Joe’s dried baby bananas. We’ve been buying these for quite a long time and always have a huge stock in our pantry just in case of a natural disaster (i.e. zombie apocalypse, hurricane, hanger). They’re delicious and sweet and have only one ingredient: baby bananas. Beautifully harvested and dried from the jungles of Thailand. Yas queen. 

 

Banana Nut Protein Bars

 

I read the ingredients on the back of one of our Banana Nut Protein Bars and found three simple ingredients: unsweetened bananas, pitted dates and raw almonds. Check. Check. Check. Super easy! I bought all three ingredients at Trader Joe’s for minimal cost.

 

We soaked up the dates for just a few minutes in warm water and then pulsed them with our dried baby bananas and almond meal. See? Super easy! Banana Nut Protein Bars are simple, healthy and travel ready. We also saved a ton of money making our own protein bars. They’re fresher, too.

Banana Nut Protein Bars

Banana Nut Protein Bars made with three simple and healthy ingredients: unsweetened bananas, pitted dates and raw almonds.
Ingredients
  • 12 dates, pitted + soaked
  • 1 (6 oz) dried baby bananas
  • ⅔ scant cup almond meal
Instructions
  1. Remove pit from dates or buy pre-pitted. Soak in warm water for a few minutes.
  2. Pulse ingredients together in the food processor until a ball forms.
  3. Line a deep-dish pan with wax paper. Push protein bar dough into the pan. Refrigerate for 20 minutes.
  4. Remove and cut into bars. Wrap in wax paper. Store in the fridge for up to 7 days.

All three ingredients used were purchased in Trader Joe's.
