One of my favorite comfort food side dishes growing up was Platanitos Maduros {Sweet Plantains}. This is a common staple in Cuban cuisine. You will find that almost every single meal concocted by a Cuban grandmother, of course, includes a heaping side dish of Platanitos Maduros.
I always look forward to my sweet Nana’s cooking because I know it includes my very favorite. Most people spend their lifetime without ever getting to try Platanitos Maduros; yet, Cubans are lucky blessed enough eat it on a daily basis. Well, for us, not so much anymore.

- 2 ripe plantains
- ¼ cup coconut oil
- Select plantain that are ripe.
- Peel and cut 2 inch slices at an angle.
- Melt coconut oil on pan at medium high heat. Cook three at a time for 2 minutes on each side or until lightly browned. Place on a paper towel lined plate to drain excess oil. Allow to cool before eating.
- Serve.
