Our family has an absolute obsession with making stuffed mushrooms! Are you a fan of stuffed mushrooms? If you look through the blog, you will find a variety of different types of stuffed mushrooms we’ve made over the years. We never get tired of coming up with different combinations of flavors and wholesome ingredients. They are all delicious and decadent. We like to call it “The Stuffed Mushrooms Series”, it’s an insider kinda thing.
This time, we chose to go with a simple creamy pesto sauce to stuff our mushrooms with. To use the word “simple” would be an understatement of how easy it is to make these creamy pesto stuffed mushrooms. Who doesn’t like an easy, peasy appetizer? Can I get an amen?
We’ve been talking about all things green and lucky on the blog this month because of St. Patrick’s Day. This appetizer of creamy pesto stuffed mushrooms is perfect for your holiday gathering. The flavor of basil is nothing short of subtle. I love that the creamy pesto sauce has hints of green from the fresh basil leaves without the use of any processed food coloring. Natural is the way to go. It’s decided that we are definitely going to have a platter of these served as hors d’oeuvres for our St. Patrick’s Day dinner party. Yay!
Sometimes we serve a five course meal at our gatherings or a simple charcuterie platter. Not this time! We are doing a variety of different appetizers for our guests to take their pick and sample just a little bit of everything.

I just can’t wait to host our first ever family St. Patrick’s Day party! Out of all the events we have plans out ourselves and been hosts of, St. Patrick’s Day has not been one of them. I guess that’s what has me so revved up about this holiday because I have another excuse to invite some guests over to the new house. I enjoy the planning of a get together with my wife because the thought of bringing everyone close together warms my heart. And, we love the bonding time of our teamwork to plan everything out to the T (sp?).
And just to think that Easter is also right around the corner. Believe you me, we are already making tracks and plans for Resurrection Sunday. My parents will be in town as of next weekend and we are hoping to convince them to stay through till Easter. They plan on leaving the Saturday right before but it would be nice if they can stay for our festive Sunday brunch. If not, we will invite our closest and dearest ones over for brunch after church.

- ¼ cup vegan cream cheese
- Handful fresh basil
- 1 pack whole mushrooms
- Spray coconut oil
- Preheat oven to 350 ̊F. Pulse cream cheese and basil leaves in the food processor until smooth.
- Remove stem from mushrooms. Pack each mushroom with creamy pesto sauce.
- Lightly spray a baking sheet with coconut oil. Place mushrooms on baking sheet with about an inch distance from each other. Bake in the oven for 30 minutes.
- Remove from oven. Allow to cool for 5 minutes.
- Serve on a nice platter.
